The word "know" in the verse Cana scites means "recognize". The incident occured in the early morning hours. Perhaps it was dark and she couldn't see His face clearly. Or, maybe her eyes were clouded by her tears. Or, maybe His physical appearance was somehow changed at the Resurrection.
