Well, you need to find out how much a Coffee shop is going to be according to what God wants. I would get prices, and see what the best of the best cost. Find a place for the coffee shop.
Once you have done all that, and have your prices and location, then God will have more for you.
Just Do your homework in what you believe God told you to do. do not be led by cost though. God is not broke. once you find out what the best of the best is then go from there. God will be ready to place people in your path to help out.
There is no real book on starting a ministry. They are all different, with different callings and functions but the same Lord. You can't follow what someone Else did.
I would just go With what you know and do your home work. Then in prayer present the plan and cost to God and go from there. A lot of times God puts something in our heart to check in to but the plan will not be until much later. Just be ready to move when God is ready for the next phase.
