Basically I keep encountering Christians who think that expressing the emotion of anger is sin. Why?!

This is false theology. The Bible says that you're not to sin in your anger, but it doesn't say anger in and of itself is sinful. It is very difficult to express anger and not sin, but it's not impossible.

Also we're created in God's image. God has expressed anger and wrath; God can't do anything that contradicts his nature, (basically he can't sin) otherwise he contradicts himself, and thus would cease to be God.

If committing anger were really sinful, then God wouldn't have given us the capacity and ability to express the emotion.

Yes Quenton is correct in saying there is Godly or Just anger and there is sinful anger. Mankind having a sinful nature tends to easily fall victim to anger which leads to sin.

EPH 4:25 Therefore each of you must put off falsehood and speak truthfully to his neighbor, for we are all members of one body. 26 "In your anger do not sin" : Do not let the sun go down while you are still angry, 27 and do not give the devil a foothold.

Here is an example in the Bible where a person allowed anger to led to murder.

GE 4:6 Then the LORD said to Cain, "Why are you angry? Why is your face downcast? 7 If you do what is right, will you not be accepted? But if you do not do what is right, sin is crouching at your door; it desires to have you, but you must master it."

God warned Cain to master his anger and not to let it led him into sin. Cain didn't listen to God and in his anger he killed his brother Abel.

So you can see the Bible clearly has something to say about anger that leads to sin. That anger is uncontrolled anger.

In Ephesians 4 verse 26 you see we are told to not let the Sun go down on our anger (so get in under control quickly) and that behind anger that is not controlled we see the Devil uses this to gain a foothold to led us to sin.

There is more but I will leave it there.

So Anger is not a sin in itself. However anger can lead us to sin and we need to get it under control or otherwise if we allow anger to go on in ourselves it can lead us into doing things that are sinful. Look at Cain he choose not to keep his anger under control and lashed out and killed his brother.
