Genesis 6:2: that the sons of God saw the daughters of men that they were fair; and they took them wives of all which they chose.

I am trying to understand this verse better. I saw a documentary in the past trying to prove those were fallen angels, and it made sense to me, but then could fallen angels/demons produce children?

The power of spirit beings over the natural world is beyond our imagination. Miracles and healings. Things created from nothing. Apparitions and visitations. Beings that walk through walls. Human blood from the
eyes of statues. Monks levitating. Witchcraft and magic. Demons possessing people. Diseases and ailments cured when demons are cast out.
How these angels did this we are not told. But it did happen. Maybe they created human bodies for themselves. Most likely given that they spawned giants known as the Nephilim and the Rephaim.
Goliath and his six fingered brothers were from nephilim descent.

Genesis 6:4 The Nephilim were upon the earth in those days, and also afterward, when the sons of God went into the daughters of humankind, and they bore children to them.
6:5 And Yahweh saw that the evil of humankind was great upon the earth, and every inclination of the thoughts of his heart was always only evil.

Deuteronomy 2:20 (It is also considered the land of Rephaim; Rephaim lived in it previously, and the Ammonites called them Zamzummim,
2:21 a people great and numerous and as tall as the Anakites; Yahweh destroyed them from before them, and they dispossessed them and settled in place of them,

Numbers 13:32 And they presented the report of the land that they explored to the Israelites, saying, "The land that we went through to explore is a land that eats its inhabitants, and all the people whom we saw in its midst
are men of great size.
13:33 There we saw the Nephilim (the descendants of Anak came from the Nephilim), and we were like grasshoppers in our own sight, and so we were in their eyes.

2Samuel 21:18 It happened afterward that there was again battle at Gob with the Philistines. Then Sibbecai the Hushathite killed Saph who was among the descendants of the Raphah.
21:19 There was again a battle with the Philistines at Gob. And Elhanan the son of Jaare-Oregim, the Bethlehemite, killed Goliath the Gittite, the shaft of whose spear was like the beam of a weaver.
21:20 Once again there was battle at Gath, and there was a man of great size. The fingers of his hand and the toes of his feet were six and six, twenty-four in number. He was also born to the Raphah.

As the Holy Spirit is able to make a special child in Jesus, I assume an fallen spirit might be able to create fallen special children as well (just not in a good way).

Gen 6:1-2 . . Now it came about, when men began to multiply on the face of the
land, and daughters were born to them, that the sons of God saw that the
daughters of men were good; and they took wives for themselves, whomever they
chose.

The characteristics of the "sons of God" has been debated. Some say they were
members of the aristocracy of that day who married attractive women from among
the commoners. Others say they were renegade spirit creatures who donned fully
functioning human avatars-- replete with synthetic male genomes --so they could
cohabit with women; thus producing a hybrid strain of hominid freaks. Others say
they were God-fearing men who threw caution to the wind and built themselves
harems of humanistic women who believed and practiced existential philosophies.

The latter seems the more likely seeing as how intermarriage between believers
and unbelievers is often frowned upon in both the Old Testament and the New.

Hooking men of faith up with infidel women is a proven tactic for watering down,
compromising, and even extinguishing Bible beliefs and practices (e.g. Num 31:7
16). The people of God are strictly, unequivocally, and clearly forbidden to marry
outside their faith. (Deut 7:1-4, 2Cor 6:14-18)

Wives can be very effective in influencing an otherwise pious man to compromise
his convictions; for example Solomon got off to a good start but down the road
accumulated a harem of foreign women who led him into idolatry; which
subsequently caused The Lord to engineer rebellion in the kingdom. (1Kgs 11 & 12)

The sons of God in Noah's day-- whose wives were chosen based solely upon
sensual appeal sans any spiritual prudence whatsoever --all perished in the Flood
right along with their infidel wives and children. Not even one of them had the good
sense to go aboard the ark with Noah.
