Cold Pasta Salad - 08-26-06, 06:07 PM

This is enough to feed a large family and then some

A 15 oz. box of rotini noodles
8 oz. thinly sliced, torn, pepperoni
2 cans of dark red kidney beans, drained
As much cheddar cheese as desired, grated
One cucumber, sliced thinly and chopped
3/4 cup lite Italian dressing
2 Tablespoons parmesan cheese
whoops...forgot one large green bell pepper, chopped fine

Cook noodles. Drain with ice. Mix the pasta with the rest of the ingredients and chill.

Hi Dreamer,

This meal sounds really good and simple to make. I am not a great cook so, I would just like to clarify what 'drain with ice' means. Does one have to mix the ice in with the noodles, say in a colander? Presumably this would be to cool the noodles down before it goes into the fridge quicker than rinsing under the cold water tap. If it is, it sounds like a great idea.

Thank you for this one, I will have to try it out at home!

Yes you are a great cook! :) I know that because you put neat recipes in this forum.

It just means drain the ice through the pasta in a colander. Rinsing with cold water is okay too, but it tends to rinse some of the vitamins away, or at least that's what I've read.

Thanks Dreamer, right back at you, so have you!

I wish I really was a great cook, occasionally I have devine inspiration and the meal will go wonderfully well. Other times it goes horribly wrong. I have had to become much better at cooking over the years due to hubby being hopeless at it!

Hubby once cooked baked beans on toast by putting the beans on top of the toast and cooking it under the grill....!!!! Bless him!

my hubby loves to cook but he seldom has time. He has a habit of saying, "That was really good, but if you'd chopped some zucchini and added it, it would be better," and stuff like that.

But he does appreciate home-cooked meals and he brags on my cooking to other people.
Also, my teenager will eat just about anything now--beans, vegetables, you name it. (When I was a single mom, I barely cooked anything but macaroni and cheese.)

Thanks for this. I do something like it only I keep it all vegetable. When tomatoes and peppers etc are coming out of the garden it is great fun. Plus maybe a little onion. Actually just whatever is available! And I use celery seed for extra flavoring....It is such an attractive dish.

I love pasta salad and have made it on many occasions, but for some reason I have never seen it made with kidney beans.. I will have to try it! Oh and the parmensan cheese is different for me as well.. I am going to certainly give this one a try made your way... Love in Christ....

Actually, I have never tasted any type of a pasta saldad before. But this sounds delicious! Thank you so very much for posting it here on the forum. I have never heard of kidney beans in it before....sounds yummy LOL!

I have to admit...it is pretty good. I make it about once every 2 months....and if you take it to a church dinner or an add-a-dish, it seems to go pretty fast.
