hearty carrot and potato soup - 05-15-08, 03:52 PM

450g/1lb carrots
225g/8oz potatos
1 large onion, finely chopped
25g/1oz butter
900ml/1 and half pints stock
tsp bouqet garni
salt
pepper
2 tbsp worcestershire sauce
1tbsp tomato puree
2tbsp chopped parsley

finely chop the carrots. peel and finely chop the potatos. melt the butter in a saucepan on a low heat. stir in the carrots, potatoes and onion. cover and let them sweat for 10 mins. pour in the stock and bring to boil. add bouquet garni and season well. cover and simmer for 20 mins.
put half the soup into a blender with the worcestershire sauce and tomato puree, and work till smooth, stir into the rest of the soup, and add the chopped parsely.
this is well nice and more like a meal..

remind me please... what's bouqet garni ?

Since it is blended, could you grate the carrots and spuds? Also how much does it make? Once I work out what the garni is, I will pass it on to my son who loves cooking...and I'll let you know how it was.

Oh yum this sounds great, sounds very like what my daddy use to make for me when i wasnt feeling well, never failed to eat it by the bucket load lol
