My Dad is diabetic. He has porridge each day believes it benefits him greatly. I also bought him Antony Worrall Thompson's GI Diet recipe book.
The glycemic index is important for diabetics. The Glycemic Index is a scale that ranks carbohydrate rich foods by how much they raise blood glucose levels compared to glucose or white bread.
Many people believe that diabetics cannot have sugar this is not strictly true. The important thing for a diabetic is to maintain a healthy blood sugar level somewhere between 4 to 7mmol/l before meals, less than 10mmol/l 90 minutes after a meal and around 8mmol/l at bedtime.
My father swings both ways he can have dangerously high blood sugar and dangerously low blood sugar especially in the morning after he has not eaten during the night. The way to find out your blood sugar level is to do a urine test on a special paper or prick your finger to take a tiny blood sample using a testing machine. Here's a recipe you may like.
Breakfast - Power shake - you can substitute the fruit juice for skimmed milk.
Ingredients
about 150g/6oz prepared fruit such as berries, mango, banana, papaya, peach, apricot, melon or kiwi fruit
250ml/8½fl oz low-fat plain yoghurt
250ml/8½fl oz fruit juice such as orange, apple, pineapple or cranberry
50g/2oz ground almonds
2 tbsp honey
3-4 tbsp wheatgerm
pinch of ground cinnamon
Method
1. Put all the ingredients in a blender and blend until smooth.
2. Pour into glasses and serve with a straw. This shake will keep in the fridge for two days.
Or try the following variations:
Replace the almonds with 100g/4oz silken tofu.
Replace the fruit juice with skim milk, soy milk or unsweetened coconut milk.
Omit the wheatgerm and use porridge oats instead.
Add other flavourings before blending such as one teaspoon of pure vanilla essence, a dash of almond essence or two teaspoons of grated fresh ginger.
For a thick shake add ice cubes before blending.
